INGREDIENTS

Shanghai Duck Breast

  • ½ tsp salt
  • 3 tbsp sweet soy sauce (kecap manis)
  • 1 tbsp mirin
  • 1 clove garlic, crushed
  • 1 pc star anise, crushed
  • 1 tsp sesame oil
  • 4 pcs duck breasts, organic

To Serve

  • As needed steamed white rice
  • As needed steamed bok choy

PREPARATION

Shanghai Duck Breast

  1. Combine all ingredients except the duck breasts together in a bowl.
  2. Cut 3 – 4 slits into the skin of the duck breasts and place in the marinade. Massage the marinade into the duck breast thoroughly. Allow to stand at room temperature for 30 minutes.
  3. Preheat your Miele Combi Steam Oven to Maxi Broil Function on Level 3. Position the baking and roasting rack over the multi-purpose tray and arrange the marinated duck breasts on the rack, skin side up.
  4. Place the baking and roasting rack and tray together on shelf position 2 of your Combi Steam Oven. Change the cooking program to Combination Mode: Maxi Broil + Level 3 + 85% moisture.
  5. Cook for 9 – 15 minutes, according to preference. Remove from the Combi Steam Oven and let it rest for 10 minutes.
  6. Strain the marinade into a saucepan and bring to a boil using your Miele Induction Hob. Reduce heat to low, Induction Setting 3 – 4 and simmer for 5 minutes.

To Serve

  1. Slice the duck breast and pour some hot marinade over the top. Serve with steamed white rice and steamed bok choy on the side.
