INGREDIENTS

Fish Curry

  • 600 g cod fillet, diced
  • 3 tbsp lemon juice
  • 400 g pineapple chunks with juice, canned
  • 1 pc red bell pepper, sliced
  • 1 pc banana, sliced
  • 40 g butter, unsalted
  • 125 ml white wine
  • 2 tbsp curry powder
  • 2 tbsp cornstarch
  • To taste salt
  • To taste white sugar
  • To taste chilli powder

To Serve

  • As needed steamed basmati rice
  • As needed coconut sambal (optional)
  • As needed cucumber oil (optional)

PREPARATION

Fish Curry

  1. Place the diced cod fillet in a microwave-safe baking dish and drizzle with the lemon juice. Stir in the canned pineapple chunks and juice, sliced red bell pepper, sliced banana, unsalted butter, white wine, curry powder and cornstarch. Season to taste with salt, white sugar, and chilli powder.
  2. Cover and cook in your Miele Combi Microwave Oven using the Microwave Function for 5 minutes at 800 / 900 W, then for a further 15 minutes at 450 W.

To Serve

  1. Place some steamed basmati rice into serving bowls and top with some fish curry.
  2. Serve with some coconut sambal and / or cucumber oil on the side if you prefer.
